Tasting Notes from Celtic Whiskey Shop and Wines on the Green
Nose Black fruits such as blackberries and blueberries, toasted flavours coming from the oak and sweet spices. We also notice clear balsamic and mineral hints which achieved with great freshness.
Palate Powerful attack with fleshy sensation, creamy and ripe tannins. Good balance of fruit. The tannins are sweet tooth and long, with hints of roasted coffee and mint make it longer and fresh.
Colour Red cherry and purple colour with violet glints. Medium layer.

Making Techniques Grenache vineyards are between 30 and 40 years old. Carignane are oder than that. Yields do not go more that 1kg/ha. Manual harvest in small casesof 15kg and grapes pass througha selection table to avoid poor quality bunches. Fermentation of destalked grapes is taking stainless steel tanks equipped with cooling jackets to maintain temperatures steady below 28ºC. We keep the wine for macerationduring 15-20 daysbefore malolactic fermentation. After this process the wine spend about 17 months in the new French oak barrels of the highest quality of 225 litres.
