In a unique process, the fruit is frozen immediately it is picked and then macerated six times a year to ensure the optimum freshness without oxidation. alcohol content of a minimum 18% abv (20% in the case of cassis) is higher than most competitors and is chosen because this provides the optimum saturation of fruit.
