Making Techniques | Only made in exceptional cases when the harvest reaches its maximum expression of the 'terroir', and perfect balance is achieved. So far this has only happened in 2001, 2004, 2005 and 2008 when the climate is ideal for obtaining a perfectly matured harvest. After rigorous selection of the bunches and alcohol fermentation, the wine is transferred to the castle's cellar where it rests for about 18 months. |
