Making Techniques | Grapes were harvested at its optimum ripeness. Once destemmed, grapes are sent to stainless steel tanks where cold maceration took place during approximately 7 days. Afterwards, selected yeasts are added to start fermentation at temperatures between 24°-28ºC for 10 days in order to keep the fruity character of this varietal. After fermentation, wine is racked by means of gravity, without pumping, and it is finally aged in stainless steel tanks. |
