Making Techniques | Grapes harvested by hand. Pressed softly to obtain a juice with great quality and low turbidity. The alcoholic fermentation was carried out in Burgundian oak barrels, twenty of which were first use. Only native yeast was used to ferment and in this way the wine achieve a real expression of the vineyard, increasing the complexity and elegance of the final mixture. Wine remained in the barrels for 10 months and was submitted to a periodic ‘bâtonnage’ of its sediment for six months to integrate the effects of the woods and create the volume and roundness in the mouth. |

Wine Enthusiast | 88 Points. ‘The nose sends up signals of a balanced, easygoing wine with oak blended nicely into pear and apple fruit. The palate is lively and mildly oaky, with baked apple, orange and woodspice flavours. A snappy, oaky finish with intense acidity closes the show.’ |
