Making Techniques | Vinification takes place in open tanks with capacity for 2, 6 and 8 tons. Different regimens of stripping and grinding of the berries were used, as well as a full bunch component. Grapes cold macerated and later fermented at different temperatures with selected yeast for this variety. Different pressing and remontage techniques used depending on the time and condition of the wine during fermentation. Wine placed in carefully selected french oak barrels, where the malolactic fermentation was done and aged for a total period of 12 months, making the mixture and thinning down the wine in July 2011. |
