Making Techniques | Grapes were cultivated in vineyards of between 25 and 104 years old, located at between 760 and 970 metres altitude. Grapes were carefully chosen from hand selected bunches and the resulting wine was aged for 15 months in barrels made from 75% French oak and 25% American oak. |

Robert Parker | 91 Points. ‘The 2010 Convento San Francisco was quite impressive. Pure Tempranillo fermented in stainless steel, it aged for 15 months in French (70%) and American oak barrels, and yet it's not oaky at all. Of course, the extra time in bottle must have polished the edges and the aromas, and is now starting to show some complexity and tertiary, developed aromas with hints of truffles, mushrooms and decayed leaves over a core of ripe fruit. The palate is medium to full-bodied, with fine-grained, slightly dusty tannins giving it character and an elegant rusticity.’ |
