Hoffmann-Jayer Bourgogne Rouge Hautes-Cotes De Beaune
Pinot Noir grapes for the Bourgogne Hautes-Côtes de Beaune are grown on two plots, "En Foigery" and "Les Castaings", in the commune of Magny-lès-Villers. Grapes are hand-picked at optimum ripeness, sorted, 100% destemmed and put into vats. Fermentation, in contact with the skins, lasts between 20 and 25 days. After racking, pressing and settling, the wine undergoes malolactic fermentation before being aged between 14 and 18 months in barrel.
