An Absinth that was reborn at the Francois Guy distillery in 2003. Originally made at the same site from 1890 until 1915. Guy Absinthe was one of the trailblazers during the boom at the turn of the century. When wine makers and anti-alcohol groups lobbied to ban Absinthe in 1915 the brand disappeared like many others. Contrary to folklore there was never a dangerous ingredient in Absinthe (other than the alcohol), the levels of Thujone (wormwood's active ingredient) would be virtually impossible to create at a dangerous level. It was in fact banned in a knee jerk reaction in an attempt to reduce alcoholism, but perhaps also to help out struggling wine makers. 

This absinthe is one of five made in the area of Pontartlier which now has its own geographical protection, thanks to Francois Guy. It is made using real, hand harvest wormwood and has a Thujone level of 34 and 35 mg per litre. As you would expect it is made according to the old recipe and is very close to the old Absinthe made at the same distillery, just with a more palatably level of alcohol.
