Making Techniques | Rigorous manual selection of the clusters. Soft pressing of grapes to obtain a must that will naturally cold decant for 48 hours. The limpid run starts fermentation thanks to wild yeasts, at controlled temperature, in stainless steel vats. Aged for 6 months in stainless steel vats on the lees. |
