Making Techniques | Careful attention is given to picking the grapes, and respecting that not all grapes or varieties are ready for picking at the same time. Fermentation takes place in cement tanks with manual pumping over. The malolactic fermentation is carried out in French oak barrels for 12 months. Total production is around 52,000 bottles. |
