Nose | Restrained on release, with deep red fruits, dust cinnamon spice, licorice and earth. Underneath are subtle notes of smoky cedar and chocolate. |
Palate | Dense plums explode onto the palate with spice, subtle chocolate and tar. The fine tannin backbone rolls on and on from the mid palate, surrounded by fresh juiciness, dark fruit and subtle oak. |

Making Techniques | De-stemmed, crushed and fermented in five, seven and ten tonne open top fermenters with three regular pump overs daily during peak fermentation to extract colour and tannin. Average time 'on skins' was 16 days, before the dry free run was drained to tank and the pressings combined. After 24 hours the wine was then racked to barrel. Malolactic fermentation took place in barrel, then racked off lees, tidied up and returned to oak. Minimal fining and unfiltered prior to bottling. Matured for 20 months in French oak hogsheads: 15% new, 25% in 1 and 2 year old oak and the balance in 3 to 4 year old oak. |
