Making Techniques Grape varieties vinified separately in stone tanks from the 18th century and cement vats. Maceration 6 to 9 weeks depending on the variety and quality of tannin. Pressing by pneumatic press. Only the free run is maintained. Malolactic fermentation occurred in barrel for the Syrah and Mourvedre and in tank for the Grenache.
