Making Techniques Crushed and fermented in three and five tonne open top fermenters with regular pump overs; three daily during peak fermentation to extract colour and tannin. Following an average of 10 days of maceration, the dry free run was drained to tank. The skins were then pressed and the pressings combined with the free run, the wine was then racked to barrel. Malolactic fermentation took place in barrel. Minimal fining and non-filtered.

Awards and/or Press Quotes
Wine Spectator 91 Points 'Dark and spicy, full-bodied and rich with cherry and plum compote flavours, picking up spicy accents as the finish lingers generously. Drink now through 2020.'
Robert Parker 90+ Points 'Deep garnet-purple in colour the 2012 Fields of Joy Shiraz exudes a lovely, earthy perfume of tree bark, forest floor and dusty earth over a core of mulberries and warm black cherries plus a hint of lavendar. Medium to full-bodied with tons of savoury and earthy flavours backing up predominant red and black fruit flesh, it is all supported by medium levels of rounded tannins and lively acid through the long finish. Drink it now to 2019+'
