Nose There are soft, ripe fruit aromas of cherries, chocolate liqueurs, blackberries, liquorice and herbs
Palate The palate is dry, medium in body with high but balanced acidity. Soft tannins with nice balance and richness of fruit. Flavours of black cherries, blackcurrants and liquorice.

Making Techniques Grapes which are collected in 20 kg crates during the first ten days of October. They are then delicately pressed and the first fermentation, which aims at preserving the fragrance, elegance and typical style of these grapes grown in the Negrar area, begins. After drawing off the Amarone at the end of February, the Ripasso wine is left on its marcs again and a second fermentation of 8-10 days takes place. This gives it more character, softness and complexity. Refining is in wooden barriques for the first 12 months and in medium-sized barrels for a further 10 months. It then undergoes another 6 months refining in bottles before being sold to the consumer.

White pepper and crushed clove emerge at first and are soon followed by ripe tones of dried cherry and creme de cassis. The finish is luscious and soft.’
