Calvados & Apple Brandy
Calvados is a specific type of apple brandy that can only be made in the French region of Lower Normandy (Basse-Normandie). Production is very controlled with 200 varieties of special apples permitted and either double distillation in pot stills or single distillation in column still being the preferred methods. It must be aged for at least two years and there are various regional distinctions with Pays d'Auge being the best quality.
