Daniel-Etienne Defaix Chablis 'Vaillon'
A real purist’s Chablis from the outstanding 2002 vintage! Defaix only releases Premier Cru Chablis once it is ready for drinking, and the Vaillon is drinking beautifully right now. Like all his wines, there is no oak but plenty of lees contact. The Vaillon is the most opulent of this producer’s three Premier Cru cuvées and has plenty of mineral & citrus character plus acacia honey with superb acidity.

Making Techniques | Alcoholic fermentation with natural yeast at 18ºC for 3 weeks. Malolactic fermentation. Stirring of fine lees each month for 18 months in order to concentrate the aromas, giving it more fatness and enzymatic qualities. |
