Making Techniques | Single plot cuve=Cru. Debudding, large leaf surface, leaf plucking, no need of crop thinning. Manual selection of the harveston a sorting conveyor at the cellar. Total crushing, destemming. Cold pre-fermentation maceration (6 Days). Temperature controlled fermentation (28ºC). 20 to 30 days vatting. Malolactic fermentation in barrels. Ageing on lees in 100% new French Oak barrels for 16 months. |
