Making Techniques | Grapes harvested by hand, and once in the warehouse cooled and submitted to a strict selection of bunches and berries. After this, lowered into 5 and 8 ton capacity stainless steel tanks, and cold macerated for seven days at 6ºC. Fermented with selected yeast for this variety and a group of extraction handling techniques used in order to achieve a greater complexity and expression from each clone separately. Remained in French oak barrels for 11 months, until achieving the evolution of the correct tannins and aromas. |
