Making Techniques | Grape varieties vinified seperately. Whole bunches pressed in a pneumatic press, then left to settle by gravity in stainless steel tank for 24 hours before racking. Fermented in lightly toasted French oak barrels from the Vosges mountains (25% first use). Aged for 12 months in barrels on the lees, with regular stirring. |
