Making Techniques | Grapes were hand-harvested and carried to the winery in 400kg plastic bins. Fruit was selected and destemmed. Besides, a previous maceration was carried out between 10 and 12 degrees Celsius. Then, fermentation with selected active dry yeasts specific for Pinot Noir was performed between 26 and 28 degrees Celsius. Fermentation was performed in 7,000-litre oak casks, including overpumping and pissage. Once fermentation was over, wine was racked to French oak barrels, where battonage took place until malolactic fermentation finished. |
