Dalwhinnie

Occasionally, and incorrectly dubbed the 'highest' distillery in Scotland. Dalwhinnie is actually in second place after Braeval. The distillery was built in 1897 and was chosen as Diageo's Highland representative for the Classic Malt when launched in the 1990's. It is a light a delicate malt and rather offensively it has at times been described as a 'ladies' malt. Yet gender rarely has anything to do with the taste buds and a person's ability to enjoy whisky! What I think is agreed is that Dalwhinnie is very slow to mature. The standard 15 Year Old actually tastes more like a 12 and older bottlings generally perform very well in tastings. Production is on the small side for a Diageo distillery and just two pot stills are used.
