Palate | Tangy with zesty strawberry and redcurrant flavour and notes of cinnamon and nutmeg. Closes with a strong lift and nervy cut, leaving a light floral finish. |

Making Techniques | Maceration with skins in vat, which is kept for 6 days at 15°C. Yeast is added to the vat to start fermentation, pumped over twice daily for 1 hour a day until the density is severely reduced. The contents are then crushed, and the juice pumped to another vat without pressing, where it’s fermented without skins at 24°C. Malolactic fermentation occurs in tank. Clarified and slightly filtered, sediments may form. |
