Making Techniques Once picked, fruit was held for a minimum of 48 hrs in a cool room to chill fruit to below 4 degrees celsius. Bunches were passed over a selection belt to optimise quality and then crushed to tank, and held at 8 degrees celsius to 'cold soak' for up to 10 days. Temperature was then allowed to rise allowing natural fermentation to commence. The individual tanks were then inoculated with local isolated yeasts. Tanks were then plunged and gently pumped over to obtain gentle extraction of tannins and colour. A handful of tanks were also allowed an extended maceration after fermentation to add weight and complexity. The wine was then put to barrel to conduct malolactic fermentation. 35% new French oak was used, and the rest 1 and 2 year old oak, with a variety of coopers used with low to medium toast so as not to dominate the wine. 14 months in large second and first fill French oak barrels.
Awards and/or Press Quotes
Decanter 4 Stars As big and bold as the name (the fist) suggests, this is a small production 100% Garnacha. Leathery aromas, notes of herbs and smoke give way to dark silky fruits, firm tannin and a bright tilt of acidity.
Awards and/or Press Quotes ‘Intriguing spice and baked earth character. Dried nettle as well. Hearty and warm on the palate. Chorizo finish. Really individual and tasty.’ Richard Hemming, Purple Pages
