Making Techniques | Only the best of each variety, each plot, each corner of the vineyard goes into Matanegra. Once in winery, these varieties are elaborated in special tanks which allow very precise control over every process. Fermentation is carried out in cement tanks, with manual pumping. Macerations are long with care taken over temperature. Malolactic fermentation is carried out in French oak barriques in which the wine ages for 18months. |
