Making Techniques | The wine Pazo Baión displays the full quality of the Albariño grape, grown in a singular vineyard, with an average age more than 40 years. After a selection of the best bunches both in vineyard and cellar, they macerate at a temperature of 6ºC for 8 hours to maintain aromatic potential. After alcoholic fermentation the wine remains 7 months on its lees in stainless steel tanks. Its positive evolution in the bottlle ensures that it can be drunk with great pleasure for a number of years after harvest. |
