Making Techniques | All grapes are hand picked and sorted on a special table before pressing. The musts are reserved on their lees for 1 week at 4ºC before alcoholic fermentation. This takes place in stainless steel vats and lasts one month between 13ºC and 14ºC . Spends 5 months on its lees in the tanks, with weekly battonage. |
