Nose Deep ripe dark aromas such as coffee blackk fruits and prunes
Palate The palate starts very brooding with layers across the palate of juicy and generous fruits. There is a cut and sway of ripe fruits that rebound in the late palate with the defined mataro notes adding length and direction.

Making Techniques The majority of the batches were destemmed and crushed to open top fermenters. The Shiraz was pumped over 3 times per day through the peak of fermentation, whereas the Grenache and Mataro, after a few days cold soak, were pumped over and plunged rigorously through the peak of fermentation. Average time 'on skins' was 15 days. The Grenache was again co-fermented with whole bunches to gain complexity and structure. All pressings were added back to free run. The Grenache and Mataro components were matured in older French hogsheads. The Shiraz was matured in 10% new French hogsheads an the balance in 1 to 4 year olf French oak. Time in oak was 14 months.
