Making Techniques The Convento San Francisco winery only produces this wine in years where the harvest is exceptionally good, using grapes from a selection of vineyards, chosen using vigorous criteria relating to their age, locationa and yield. Time in barrel starts with malolactic fermentation, using mainly French oak (90%) but also some american (10%) After 16 months in casks for ageing, the wine from each barrel is tasted and only those considered to display special characteristics selected for bottling. In 2005 the Ribera del Duero region was characterised by climate conditions of droought and high temperatures during the ripening period, resulting in mature ripening and red fruit qualities from the grapes.
