Making Techniques | Fermentation lasts around twenty days with three to four daily pumpings performed in order to extract good levels of tannin. Since the year 2000 top Bordeaux is aged in 50% new barrels for six months. A subtle blend enhances the fruity wine without the wood being too dominant |
