Making Techniques Fermentation in thermo regulated stainless steel vats during 15 days. Maceration 20-to-25 days. Malolactic fermentation in vats. Egg-white fining. Slight filtering before bottling. Ageing in French oak barrels during 12 to 15 months. 50% new oak, 50% one-year old. Racking every 3 months.
