Aqua Vitae is the brainchild of Chris Hennessy (Head Bartender at the Dylan Whiskey Bar) & Jarrod Cuffe (Founder of Off the Cuffe bitters). They have recreated Aqua Vitae using the original recipe created by Richard De Ledrede, the Bishop of Ossory in Killkenny circa 1324. Aqua Vitae is otherwise known as the original uisce beatha and the precursor to whiskey.

Layers of natural oils from the organic botanicals coat the palate releasing ginger heat across this liquid fruit cake batter layered upon green apples & cinnamon.

Aromas (without water)
Sweet cassia bark, fennel, star anise, intermingle to the front. Fresh lemon zest & burnt orange rinds, lead to marmalade, stewed raisins, sultana sweetness. Earthy spice finishes with mace, ginger & clove warmth.
Flavour
Pot still spice & barley grains,coated honey & brown sugar. Ginger, clove, nutmeg & mixed peels, raisins & hazelnuts.
