Tennessee whiskey is legally distinct from bourbon. Jack Daniel's and George Dickel are the category's defining producers, both employing the Lincoln County Process: filtering new make spirit through layers of sugar maple charcoal before barrel entry. This extra step strips harsh congeners and adds the characteristic toasted wood sweetness that separates Tennessee whiskey from standard Kentucky bourbon.
Tennessee whiskey follows the same production requirements as bourbon, using a corn dominant mash bill of at least 51% corn, distilled to under 80% ABV, and aged in new charred American oak containers. The defining additional step is the Lincoln County Process: the new make spirit is slowly dripped through a column of sugar maple charcoal, typically ten feet deep, before barrel entry. This charcoal mellowing step removes specific congeners and adds a characteristic smooth, sweet, and clean profile unique to the Tennessee style.
