A 5cl offering of this Small Batch Irish Whiskey by Skellig Six18. Made from a blend of Pot Still and Grain Irish Whiskey, finished in Pedro Ximénez Sherry casks after an initial maturation in ex-Bourbon barrels. The pot still whiskey influence shines in this one, adding lots of depth and balance, with the PX finish adding a rich sweetness to the taste profile. Pedro Ximénez Sherry casks were chosen in reference to the centuries of maritime trade between the Skellig Coast and European ports, which often saw boats pass the Skellig Rocks carrying sherry from the bodegas of Jerez.

How to drink Irish Whiskey?

Irish whiskey is most honestly assessed neat at room temperature in a tulip glass, where the full aromatic profile can develop. Adding a few drops of room temperature water to a pot still or single malt expression above 46% ABV opens the ester character and integrates the oak. Over a large ice sphere it becomes a more contemplative drink that evolves as the temperature rises.
