Skellig Small Batch Irish Whiskey is a premium Irish whiskey made from a blend of Pot Still and Grain Irish Whiskey, finished in Pedro Ximénez Sherry casks after an initial maturation in ex-Bourbon barrels. The pot still whiskey influence shines in this one, adding lots of depth and balance, with the PX finish adding a rich sweetness to the taste profile. Pedro Ximénez Sherry casks were chosen in reference to the centuries of maritime trade between the Skellig Coast and European ports, which often saw boats pass the Skellig Rocks carrying sherry from the bodegas of Jerez.
