Knappogue Castle

The story of Knappogue whiskey began in the 1960s when Irish American businessman Mark Andrews and his architect wife Lavone stumbled upon an old castle in Co Clare first built by the Clan MacNamara in 1467. They were so enamoured that they bought the structure in 1966 and set about restoring it to its former glory. Along the way, Mr Andrews set about his other interest, old Irish whiskey. He started buying casks first filled in the late 1940s and early 1950s, bottling and labelling them under the Knappogue Castle name, for the enjoyment of his friends and family.

The Knappogue Castle 1951, an historic old single pot still produced by the Daly Distillery in Tullamore before it shut its doors, was released to the public in 1998 after the couple's son, Mark III, caught the bug and founded Great Spirits, which was subsequently merged with Castle Brands in 2010. They now have a great range of single cask and small batch whiskeys, sourced from the Cooley Distillery and more recently from the Bushmills Distillery. The Celtic Whiskey Shop has also teamed up with Knappogue Castle to produce some fine single malt, single cask whiskey matured in our own barrels, one of the crowd favourites at last year's Whisky Live Dublin.

Irish whiskey is most honestly assessed neat at room temperature in a tulip glass, where the full aromatic profile can develop. Adding a few drops of room temperature water to a pot still or single malt expression above 46% ABV opens the ester character and integrates the oak. Over a large ice sphere it becomes a more contemplative drink that evolves as the temperature rises. Avoid adding ice to aged or premium expressions: the cold contracts the spirit and suppresses the complexity you paid for.

Irish whiskey is distilled from a grain mash, typically malted barley with or without unmalted barley, grain, or corn, and the distillation process removes gluten proteins to below detectable levels. All major Irish whiskey producers including Irish Distillers, Midleton, Teeling, and Bushmills consider their products gluten free under current food safety standards. Individuals with clinically confirmed coeliac disease should consult their medical advisor before consuming any grain distilled spirit.

For under €40, Powers Gold Label and Jameson 18 Year Old represent excellent value for their respective categories. The single pot still style using both malted and unmalted barley is Ireland's most distinctive and most rewarding contribution to world whiskey.

The five recognised styles are single malt, single grain, single pot still, blended, and blended malt. Triple distillation, used by the majority of Irish producers, and the use of a proportion of unmalted barley in the single pot still style are the defining technical characteristics of the category.
