Our first foray into single cask rum. It was produced with continuous still distillation and then matured in a refill bourbon barrel. The first 10 years ageing was in a hot and steamy Panama followed by 6 years maturation in a cooler UK then cooler again Irish climate. We have bottled a portion of the cask and decanted the remainder into some smaller casks for finishing.

Taste
Warm, juicy, spicy and tannic with toasted exotic spices, cloves, cinnamon, dates, caramel toffee and flambeed bananas.
Nose
Sticky toffee pudding, chocolate oranges, clove oil, dried bananas, tangerine & vanilla.
Finish
Really good evolution in the mouth with a spicy start becoming woody then finishing up with lots of fruit.
