A very special release that marks a historic collaboration, uniting the distinct character of three renowned single casks from Dingle Distillery, Echlinville Distillery, and Killowen Distillery. The selected casks – Killowen Cask #004 (filled 2019, refill quarter cask ex-Bourbon), Echlinville Cask #450 (filled 2016, first-fill ex-Bourbon), and Dingle Cask 261 (first-fill ex-Bourbon) – were married together for over two-and-a-half-years in cream Sherry butts from the Jerez region in Spain. The taste carries flavours of green apple, blackberry and peppery spice. Its finish is described as long from the pot still’s spice, and sweet from the Sherry cask.
