Yes. Martini vermouth, once opened, begins to oxidise. As an aromatised wine, it has a shelf life of three to four weeks after opening if refrigerated with the cap tightly sealed. At room temperature, quality deterioration is noticeable within days. Many bartenders treat opened vermouth with the same urgency as opened wine rather than opened spirits. A Negroni or Martini made with stale vermouth is perceptibly inferior regardless of the quality of the other ingredients.
Martini Bianco or Rosso is best served well chilled in a wine glass or copa over ice with a slice of orange and a splash of soda water for a light aperitif serve. For the cocktail Martini, combine gin or vodka with Martini Extra Dry vermouth in a chilled mixing glass, stir with ice for 30 to 45 seconds, strain into a frozen coupe or Martini glass, and garnish with a lemon twist or olive.
