Octomore 14.3 is a stellar release from the ever-popular Islay distillery, made using malt grown just two miles from the distillery on Octomore farm. Matured in a combination of first-fill ex-American whiskey casks and second-fill wine casks, carefully chosen to capture the terroir and unique flavour of the Islay barley. Lots of soft, biscuit notes on the palate from the malted barley complemented by earthy peat smoke, creamy porridge, butterscotch, honeycomb, and a hint of vanilla.

Aromas (without water)
Soft, biscuity malt is followed by peat smoke and an assortment of sweet, stoned fruits, with ripe apricots, peach and honey-drizzled pears. Candied lemon peels add a hint of citrus, balanced with butterscotch, honeycomb, chocolate and vanilla ice cream.
Flavour
Delicate oak notes immediately come through, followed by the presence of smouldering peat. Floral hints of gorse and honeysuckle rise above the malty Islay-grown barley, which is rich and sweet with creamy porridge and cereal notes. The structure of the French oak, together with the sweet vanilla and toffee of the American oak, combine beautifully, bringing a harmonious balance to the palate.

Islay whiskies are peaty because the island's distillers traditionally used locally cut peat to dry malted barley in their kilns, and many continue to do so. Burning peat produces phenolic compounds, primarily guaiacol and cresols, which are absorbed by the malt during the drying process and carried through distillation into the spirit. The specific character of Islay peat, formed from decomposed coastal vegetation, seaweed, and heather, produces the distinctive medicinal iodine, seaweed, and maritime smoke associated with Ardbeg, Laphroaig, and Lagavulin.
