A rare, limited edition single malt from Lambay. This is the oldest expression from the distillery and has aged in Bourbon barrels for 18 years and then finished in Camus Cognac casks which are exposed to the sea air on Lambay island. Bottled at 43% ABV, this superb whiskey boasts rich aromas of vanilla, oak spice and green fruits with wonderful nutty flavours with hints of saffron and ginger with a long-lasting, sweet finish. Tasting Notes from Celtic Whiskey Shop and Wines on the Green

Nose Warm vanilla, smooth oak, mature plums, green apples, hints of Iodine, and lingering rancio. Aromatic yet gentle and pleasant, the maritime influence of salt and iodine is present, with rich vanilla, rancio, and a hint of spice and green fruits.

Palate Exotic spices such as Saffron, Ginger, and pepper, with sweet pastry-like notes of almond, honey, and walnuts. There's a maritime influence with the iodine, and salt with a smooth and pleasant full mouthfeel. Plum & Apple fruit is well balanced with this cognac-cask finish, lingering spice notes of ginger create a long finish of green fruits and spice.

Finish Long-lasting sweetness with a good balance of oak and salt, a lingering mouthfeel yet elegant in the finish with hints of honey and ginger.

How to drink Irish Whiskey?

Irish whiskey is most honestly assessed neat at room temperature in a tulip glass, where the full aromatic profile can develop. Adding a few drops of room temperature water to a pot still or single malt expression above 46% ABV opens the ester character and integrates the oak. Over a large ice sphere it becomes a more contemplative drink that evolves as the temperature rises. Avoid adding ice to aged or premium expressions: the cold contracts the spirit and suppresses the complexity you paid for.

Is Irish whiskey gluten free?

Yes. Irish whiskey is distilled from a grain mash, typically malted barley with or without unmalted barley, grain, or corn, and the distillation process removes gluten proteins to below detectable levels. All major Irish whiskey producers including Irish Distillers, Midleton, Teeling, and Bushmills consider their products gluten free under current food safety standards. Individuals with clinically confirmed coeliac disease should consult their medical advisor before consuming any grain distilled spirit.
