For this gin local botanicals were foraged from the area around Glendalough and were combined with traditional gin aromatics before being distilled together in the company's small copper still. For this batch the following botanicals have been used. Juniper, corriander seeds, lemon peel, angelica root, licorice root, bitter almond, orris root, darred malt, ceylon cinnamon, ginger, all spice, gorse flowers, dandelion flowers, beech leaves, sweet cicely, primrose, hawthorn leaves, woodruff leaves and flowers, ground ivy, wood sorrel, birch sap and water mint. 

Because of natural oils present in the gorse and dandelion flowers there may be a slight haze in the gin, especially when the bottle gets cold. This is nothing to worry about! The distillers could have filtered it to remove these natural oils but thought it best to leave in as much flavour as possible.

The standard Irish spirits measure is 35.5ml, established under Irish Weights and Measures regulations, which is one third larger than the UK standard measure of 25ml. This means Irish whiskey measures are meaningfully more generous than those served in Britain or most of Europe. In many Irish pubs, particularly in rural areas, the measure may be served as a slightly rounded 35ml to 40ml pour depending on the house custom and staff training.
A standard Irish measure of spirits is 35.5ml, set by the Intoxicating Liquor Act. This is the regulated minimum measure for spirits served in licensed Irish premises. For reference, the UK standard measure is 25ml and the standard EU measure varies by country. The larger Irish measure reflects both historical convention and regulatory tradition. When purchasing a single or double in an Irish pub, you are receiving a more generous pour than in most other jurisdictions.
