A limited edition release from Islay's Kilchoman distillery, this is the 2024 edition of its Sauternes Cask Matured single malt. This Sauternes Cask Finish combines both the maritime peat smoke and tropical fruit typical of Kilchoman with the softer buttery floral notes characteristic of the Sauternes casks.This expression spent its full maturation (a minimum of five years) in a host of fresh and refill sauternes sweet wine casks selected by Kilchoman founder Anthony Wills to achieve a perfect balance of buttery sweetness, grilled fruit, sweet spice, and floral peat.

Islay whiskies are peaty because the island's distillers traditionally used locally cut peat to dry malted barley in their kilns, and many continue to do so. Burning peat produces phenolic compounds, primarily guaiacol and cresols, which are absorbed by the malt during the drying process and carried through distillation into the spirit. The specific character of Islay peat, formed from decomposed coastal vegetation, seaweed, and heather, produces the distinctive medicinal iodine, seaweed, and maritime smoke associated with Ardbeg, Laphroaig, and Lagavulin.
