Kilchoman Small Batch 48.7%

A superb expression of Kilchoman that makes use of some of the best casks available for maturation. This small batch exclusive edition includes some ex-bourbon, ex- sherry and STR cask matured whiskies. 

The STR casks are an innovation not found in many distilleries and were a feature created by the late Jim Swan. The acronym stands for 'shaved, toasted and recharred'. Each cask previously held red wine and to tame some of the overpowering red wine flavours the casks are shaved internally to reveal some active wood. This is then toasted to break down the harsher oak elements such as cellulose, hemi cellulose and lignin. The cask is then charred to create an active char layer that improves the interaction with the maturing spirit. 

A perfect marriage of whisky cask styles that produces a well rounded, yet still satisfyingly smoky single malt.
