This rather rare release from Kilchoman is a real treat for fans of the Islay distillery. Kilchoman Bourbon Single Cask 11 year old is a single malt distilled in 2006 and aged in a single bourbon barrel. The single malt was then bottled in 2017 and sold exclusively at the distillery, with a limited outturn of 234 bottles. Bound to make a fine addition to any scotch fans collection!

Islay whiskies are peaty because the island's distillers traditionally used locally cut peat to dry malted barley in their kilns, and many continue to do so. Burning peat produces phenolic compounds, primarily guaiacol and cresols, which are absorbed by the malt during the drying process and carried through distillation into the spirit. The specific character of Islay peat, formed from decomposed coastal vegetation, seaweed, and heather, produces the distinctive medicinal iodine, seaweed, and maritime smoke associated with Ardbeg, Laphroaig, and Lagavulin.
