Waterford Distillery's hugely popular Organic Gaia series has released its second edition. This mouth-watering whiskey is made from pure barley and aged in First Fill American casks (39%) along with premium wine barrels from France (19%), unoccupied oak barrells (17%) and vin doux naturel filled with naturally sweet wine(25%). Defined by its delightfully spicy palate with hints of liqourice, citrus, red cherries and white pepper, it goes perfectly over ice.
