We have a long relationship with Bodegas Emilio Hidalgo going back around 15 years or more and we import & distribute their excellent sherries in Ireland. We first imported an Amontillado & Palo Cortado cask from Hidalgo in 2010. The Amontillado cask was first used to finish Connemara cask 155 which I believe was 19 years-old and possibly the finest Connemara ever bottled. The Palo Cortado cask was used to finish our very first Celtic Cask Aon 1996.
Both casks are currently maturing other whiskeys which we’ll release in the years ahead.
We were also very fortunate to attain a set of 6 different Emilio Hidalgo casks (Fino, Manzanilla, Amontillado, Palo Cortado, Oloroso, PX) which have been maturing Dingle Single Malt since 2013 and we hope to release the first cask (The PX cask) once it reaches 12 years.
Since then, we’ve ask Fernando Hidalgo annually for the opportunity to buy casks but the answer has nearly always been ‘Sorry we don’t have any spare’. He says that in all his years (I’d guess at 50+) that they have never bought new casks. All casks therefore are casks that have been used for 50 plus years and should give a whiskey a substantial sherry influence but less oak as the oak.
There is always a higher danger of an increased angels share from older casks. Something we have found out with Celtic Cask 52 which was matured for it’s last 10 years in an old Hidalgo Amontillado cask. This cask lost 43% liquid in the ten years but has a superb amontillado influence and we are delighted with it. This is the highest angels share we have ever experienced and the same wasn’t true of any other Hidalgo casks we’ve filled.
These casks don’t come cheap and neither does shipping them from Jerez. However, we do believe this is a very rare opportunity to get a really prized cask.
