Bottled at a lower strength bourbon from the original 101 proof. Wild Turkey 81 Proof was created by the associate distiller Eddie Russell, the son of master distiller Jimmy Russell. The high rye content in the mash bill and the ageing process in casks with a heavy char, results in a whiskey which is huge in flavour and complexity without the same heat as the 101 proof.

Wild Turkey produces both bourbon and rye whiskey. Wild Turkey 101 is a bourbon, made from a corn dominant mash bill and aged in new charred American oak. Wild Turkey Rye is a separate expression made from a minimum 51% rye grain mash bill, which produces a noticeably spicier, drier, and more herbaceous character than the bourbon range. Both are produced at the Wild Turkey Distillery in Lawrenceburg, Kentucky, and both carry the 101 proof bottling strength as a core product feature.
