The Celt Part II Red Wine Finish (CWS Exclusive)
Our first pick has to be The Celt Part II Red Wine Finish. Independently and proudly bottled by us here at Celtic Whiskey Shop. This expression is a single malt finished in red wine casks from an unspecified Irish distillery and is a non-age statement release. Our aim with all releases of The Celt series is to release what we consider to be excellent, tasty whiskeys at affordable prices. We made this one to be opened, enjoyed, and shared for its quality rather than having any collectable value and we hope you feel the same.

Irishman Founders Reserve Oloroso Sherry Cask (CWS Exclusive)
Our next pick is a limited release from Walsh Distillery, available exclusively from us here at Celtic Whiskey Shop. This features a unique blend of Single Malt and Single Pot Still Irish Whiskey which has been triple distilled and aged initially in American Oak Barrels prior to a finishing period of 12 months in an Oloroso Sherry butt. The flavours hit all the right notes when you think of Christmas: nutty, sherry notes supported by decadent notes of dark chocolate and succulent dried fruit. Just 948 bottles released so this one is a real rare, limited treat.

Bushmills Causeway Collection 1995 Malaga Cask
The 1995 Malaga Cask is a limited edition rare cask finished, cask strength (53.5% ABV) and non chill-filtered Irish single malt. It represents a bold new step for Bushmills, after maturing for almost 11 years in Oloroso sherry butts and bourbon barrels, Helen Mulholland, Master Blender, finished this whiskey in rare Malaga casks for an unprecedented 14 years. A sweet, fruity, and syrupy delight with long-lasting flavours of fruit jam, apple syrup, cinnamon, and blackberry jam.

Knappogue 12 Year Old Marsala Cask (CWS Exclusive)
We just had to include this exclusive you can only find here at Celtic Whiskey Shop! Part of the new 'Cask Finish Series' from Knappogue Castle. This single malt is non-chill filtered, triple distilled and aged for a minimum of 12 years in ex-bourbon barrels before being finished in Marco de Bartoli Marsala casks. A truly delightful treat to ring in the holiday season. Limited to just 690 bottles so this one won’t be around for much longer!

Roe and Co Cask Strength 2020 Edition
Roe & Co Cask Strength Batch 2020 is a new premium Single Malt Irish Whiskey. An excellent 13 year old Single Malt whiskey which has spent the entirety of its life in Port Casks; an extremely rare style of liquid to possess in such a young whiskey market. Port Casks have long been known for the effect they have on whiskeys’ depth of flavour and this release is no exception with an intricate array of dark berry, chocolate, and spice notes. A lovely, velvety texture with a lingering warmth. Perfect for sipping by the fire during these cold winter nights! We recommend serving this one neat or over ice.

Teeling 29 Year Old Single Cask (CWS Exclusive)
Another whiskey available only through Celtic Whiskey we are well proud of here! This one was made in celebration of the arrival of our very own Single Cask, Teeling 29 Year Old Cask #6759. This exclusive is a crystal malt distilled in September 1991 and turned 29 this year. Fully matured in refilled Oloroso sherry hogshead cask. Only 216 bottles of this expression were released so be sure to grab yours before they’re all gone!

Egan's Centenary
Released to commemorate the 100 years since the passing of their co-founder, a leading figure in the struggle for an independent Ireland. This limited edition is a blend of single malt and single grain Irish whiskey that was initially matured in ex-Bourbon casks before being finished in XO Cognac French Limousin oak casks. Very elegant on the palate with flavours of sweet vanilla and orchard fruits. A total of 5995 bottles were released but only 780 bottles available in Ireland.

Redbreast 12 Year Old Cask Strength
The new bottling of the award-winning Redbreast Cask Strength 12 Year Old. The Cask Strength has perhaps been one of the most favourably received and won 'Irish Whiskey of the Year' in the 2013 Irish Whiskey Awards. Most of the maturation is done in sherry casks but with careful selection so that the sherry character does not overpower the whiskey. Almost like an unpeated Scottish coastal malt in character. Complex with fruit, spices, and vanilla flavours. The pot still content really shines through which explains why it has been winning so many awards throughout the years.

Kurayoshi 8 Year Old Pure Malt
For those looking for something different! A delightful Japanese whisky produced by Matsui Shuzou in the Tottori Prefecture. Kurayoshi 8 Year Old Pure Malt is rich in aroma and deep flavour. Made from a blend of Scotch and Japanese malt whiskies before it has been aged for eight years in ex-bourbon white oak barrels. Fruity and nutty taste along with a hint of vanilla.

Macallan 12 Year Old Sherry Cask
We just love a good sherry cask here at Celtic Whiskey and this one is no exception! The classic Macallan of old from the famous Speyside region. Unfortunately, these days it is getting harder to source Macallan that has been matured in sherry barrels. At one time this was the official standard bottling and has always been regarded as one of the best sherry cask matured single malts available. Deliciously smooth, with rich flavours of dried fruit and sherry and a perfect balance of smoke and spice.

Kilchoman Sanaig
Kilchoman's neighbours on the island of Islay could learn a few things from this expression! A no-age-statement Kilchoman that has been matured in both ex-Bourbon and Sherry barrels. The latter adding richness and apparent maturity giving this whisky a mouthfeel normally only found in much older whiskies. The heavily peated style of the distillery works in perfect harmony with the dried fruit and spice flavours from the sherry casks, something that can be hard to get right. In this case, the smoke shines right through to the end but the journey getting there is very enjoyable. Highly recommended!

We couldn’t resist adding a bourbon to this list! Eagle Rare Kentucky Straight Bourbon Whiskey is masterfully crafted and carefully aged for no less than ten years. The rareness of this great breed of bourbon is evident in its complex toffee, honey, and oak aroma, as well as the smooth and lingering taste. Expect bold, dry, oaky flavours with notes of candied almonds and rich cocoa. Eagle Rare is a bourbon that lives up to its name with its lofty, distinctive taste experience.
