The 14th Edition of Kilchoman’s 100% Islay release has been matured for a minimum of 9 years in a carefully selected combination of bourbon and Oloroso sherry casks, with a cask ratio of 9:1 in favour of bourbon.
This long maturation has allowed the spirit to fully integrate the influence of American oak, bringing forward notes of vanilla, butterscotch, and toasted oak while the small proportion of Oloroso sherry casks adds a subtle layer of rich dried fruit and spice. The result is a beautifully balanced dram that showcases the natural citrus sweetness and floral peat smoke of Kilchoman’s 100% Islay spirit.

Islay whiskies are peaty because the island's distillers traditionally used locally cut peat to dry malted barley in their kilns, and many continue to do so. Burning peat produces phenolic compounds, primarily guaiacol and cresols, which are absorbed by the malt during the drying process and carried through distillation into the spirit. The specific character of Islay peat, formed from decomposed coastal vegetation, seaweed, and heather, produces the distinctive medicinal iodine, seaweed, and maritime smoke associated with Ardbeg, Laphroaig, and Lagavulin.
